Gear:

I know there are various options and MANY can work here are some I !!! find good:

Tavas Favour + Dragon + Bloodspawn

Tavas Favour + Werewolve Hide + Bloodspawn

Histbark + Footmans + Bloodspawn

(For more Dmg) A mix of Black Rose, Knight Errants Mail, Seventh Legion, Hundings, Tremorscale or Grothaar (if u have good mag dmg)

Food: Tri-Stat-Food

Glpyhs: Mostly make up for ur weaknesses and if u have enough stats just go for more regen/dmg.

Ur stats ur going for are mostly :
30k Live
a good mix of Stam and Mag for blocking and buffing/healing mostly 20k in both should be enough (also a 1,2-1,5k Mag regen is quite nice to have)
Buffed (Bloodspawn inclusive) reach softcap 33k resistance

Race:
I find Khajiit, Argonian, Nord, Imperial or Orc are some of the more endurable races.
Redguard for the more Stam oriented players.
Darkelves are my favourite race ( i tanked with my d-elve dk-tank vDSA ), justt because u have the option the go unpunished for vamp and if u dont go there u have some very nice flame resistance which is the most popular dmg type nowadays.

U can tank/dd/heal with very races !!! some are just better in certain situations, if u dont know what to choose because u dont have "far from home" or the Imperial Edition, for EP - Nord, DC - Orc, AD - Khajiit. Those are the tankiest race of each faction.
